Pooch this is the route I would take from Maggie Valley to okeechobee. Your route from there south is good.
West of Cocoa is the lone cabbage fish camp (good food & air boat rides). When you get to Okeechobee there is a pier looking out on the lake.
As you head south on 441 there is another over look on the north side of Port Mayaka locks. If you don't think you can make it Okeechobee from Cocoa before dark I would Stay at I95 and SR50 in titusville Like wise if you can't make it to the Miami area from Okechobee I would either stay in okeechobee or go around the west side of the lake and stay at Roland and Mary Martins fish camp.
